A Perfect Pumpkin Parfait

Updated: Nov 16, 2019

Okay, I'll admit it. I'm that basic b*tch that eats pumpkin spice everything as soon as I feel the first breeze of fall. You can probably find me at a pumpkin patch with a pumpkin cream coffee too. One of my favorite things to eat at all times of day is a fruit and yogurt parfait. They're quick, easy, and my toddlers love them too! So, naturally, I couldn't resist making this delicious lil' thing. Inspired by Chobani Flip Autumn Harvest Crisp, I present to you,

A Perfect Pumpkin Parfait.

The Details:

It's soy free, gluten free & vegan.

Absolutely none of these ingredients need to be measured. However, these are the measurements that I use for myself. Feel free to add as much of any ingredient on the list as you want. Make it your own.

What You'll Need:

1/8 - 1/4 cup of Organic Pumpkin Puree (remember: more pumpkin = less sweet)

1 Fresh Banana (sliced)

An sh*t ton of Pumpkin Spice

A pinch of Gold Glitter Sugar (Purely for the aesthetic, because I'm extra)

Directions:

1. Mix Vanilla Yogurt & desired amount of pumpkin puree together in a bowl.

2. Add desired amount of pumpkin spice to the pumpkin & yogurt mixture. Mix it up.

3. For the aesthetic, you can transfer mixture to a new, clean bowl. But, totally not necessary.

4. Add sliced bananas, chopped Taza Chocolate & Roasted Pepitas on top of the Yogurt.

5. Drizzle desired amount of Peanut Butter over bananas (can never have too much)

6. Put as much pumpkin spice on top of the Peanut Butter & bananas as you want.

7. Sprinkle gold glitter sugar on top of bananas and peanut butter for a little extra sparkle.

aaaaaaaand, you're done! Enjoy!
