Every time I've made these, they're gone within the hour.
Not to toot my own horn, but I'd literally eat and entire pan by myself.
Even non-vegans love them!
Don't be overwhelmed by the amount of ingredients or how many steps there are.
I promise, they're so easy!
Here's what you'll need:
1 Bag Tortilla Chips with Lime (I used Tostito's Hint of Lime Chips)
Olive Oil
1 Can Organic Pinto Beans
1 Cup Organic Riced Cauliflower
1/2 Cup Onion (Diced)
1/2 Bell Pepper (Diced) (I use green)
2 Jalapenos (sliced, no seeds unless you like extra spicy)
Sliced Black Olives
1 Avocado (or Guac, if you prefer that)
Mitchell's Fresh, Fresh Chipotle Salsa (or salsa of choice)
1/4 Cup Scallions (green onion)
Trader Joe's or McCormick's Organic Taco Seasoning
For the Cheese:
1 7 oz. Bag Parmela Creamery Cheddar Shreds
A handful of Parmela Creamery Mozzarella Shreds
A splash of Coconut Milk (I use So Delicious Unsweetened Coconut Milk)
Taco Seasoning
What To Do:
1. Preheat oven to 400.
2. In a large skillet heat olive oil on Med/High Heat. Once heated, add Bell Pepper.
3. Stir occasionally for about 5 min. Then add onion.
4. Once onion is a little translucent and pepper is soft, remove from pan and put off to the side in a bowl.
5. drain half of the water out of pinto bean can. If you drain all of it by accident just add water to it.
6. In same, still heated pan... lower heat to medium, cook Pinto beans on Medium heat.Stir occasionally until soft. Add Riced Cauliflower & 3/4 packet of taco seasoning. Mix it all together & cook until caulifower is soft. Beans should be slightly overcooked at this point.
7. Remove Beans and cauliflower & set to the side.
8. Add olive oil to the still heated pan. Add Jalapenos.
9. In a separate, small unheated sauce pan, add the cheeses, coconut milk & remaining taco seasoning. Put on a low/medium heat, stirring consistently until melted, smooth & creamy. If it seems too thick & doesnt drip off of utensil, add a bit more coconut milk.
10. Jalapenos should be finished. On a large cookie sheet, or pan, strategically place all chips so they allllll get covered on cheesy nacho deliciousness.
11. In this order, top with Beans and cauliflower, then pepper and onion, then cheese. Last, Jalapenos. Put into preheated oven uncovered for 7 minutes.
12. While nachos are in the oven, prepare scallions, avocado or guac, olives & salsa.

14. Eat the entire pan in one sitting.
